Ingredients
- 4 kebapche sausages
- 4 large red bell peppers
- 1 onion, chopped
- 2 garlic cloves, minced
- 2 tablespoons olive oil
- 1 tablespoon red wine vinegar
- Salt and pepper to taste
Instructions
- Preheat the grill to medium-high heat.
- Grill the kebapche sausages for 12-15 minutes, turning occasionally, until cooked through and nicely charred.
- While the sausages are grilling, place the red bell peppers directly on the grill and cook, turning occasionally, until the skin is charred and blistered, about 10-12 minutes.
- Transfer the grilled peppers to a bowl, cover with plastic wrap, and let them steam for 10 minutes. Then, peel off the charred skin, remove the seeds, and chop the peppers.
- In a skillet, heat the olive oil over medium heat. Add the chopped onion and cook until softened, about 5 minutes. Add the minced garlic and cook for an additional 1-2 minutes.
- Add the chopped roasted red peppers to the skillet, stir in the red wine vinegar, and season with salt and pepper. Cook for 5-7 minutes, stirring occasionally, until the mixture thickens slightly.
- Remove the skillet from the heat and let the red pepper spread (Lutenitsa) cool slightly.
- Serve the grilled kebapche sausages with the roasted red pepper spread on the side.
