Ingredients

  • 1 whole chicken, cut into pieces
  • 1 cup coconut milk
  • 4 shallots, chopped
  • 3 cloves garlic, minced
  • 2 lemongrass stalks, bruised
  • 1 inch ginger, grated
  • 2 tablespoons tamarind paste
  • 2 tablespoons chili paste
  • 1 tablespoon turmeric powder
  • Salt to taste

Instructions

  1. In a bowl, mix together coconut milk, shallots, garlic, lemongrass, ginger, tamarind paste, chili paste, turmeric powder, and salt to make the marinade.
  2. Marinate the chicken pieces in the mixture for at least 2 hours, or preferably overnight in the refrigerator.
  3. Preheat the grill to medium-high heat.
  4. Grill the marinated chicken pieces for 10-12 minutes on each side, or until fully cooked and slightly charred.
  5. Serve the grilled spiced chicken hot with steamed rice and a side of fresh salad.
