Ingredients
- 1 whole chicken, cut into pieces
- 1 cup coconut milk
- 4 shallots, chopped
- 3 cloves garlic, minced
- 2 lemongrass stalks, bruised
- 1 inch ginger, grated
- 2 tablespoons tamarind paste
- 2 tablespoons chili paste
- 1 tablespoon turmeric powder
- Salt to taste
Instructions
- In a bowl, mix together coconut milk, shallots, garlic, lemongrass, ginger, tamarind paste, chili paste, turmeric powder, and salt to make the marinade.
- Marinate the chicken pieces in the mixture for at least 2 hours, or preferably overnight in the refrigerator.
- Preheat the grill to medium-high heat.
- Grill the marinated chicken pieces for 10-12 minutes on each side, or until fully cooked and slightly charred.
- Serve the grilled spiced chicken hot with steamed rice and a side of fresh salad.
