Grilled Spicy Stingray (sambal Stingray)

Ingredients

  • 1 whole stingray, cleaned and gutted
  • 5 tablespoons sambal paste
  • 2 tablespoons tamarind juice
  • 2 tablespoons vegetable oil
  • 1 teaspoon sugar
  • Salt to taste

Instructions

  1. Preheat the grill to medium-high heat.
  2. In a small bowl, mix the sambal paste, tamarind juice, vegetable oil, sugar, and salt to make the marinade.
  3. Score the stingray on both sides and spread the marinade over the fish, making sure to coat it evenly.
