Ingredients

  • 1 red bell pepper, cut into chunks
  • 1 yellow bell pepper, cut into chunks
  • 1 zucchini, sliced into rounds

  • 8 cherry tomatoes
  • 1/4 cup olive oil
  • Salt and pepper to taste
  • 8 wooden skewers, soaked in water for 30 minutes
  • 1 cup almonds, toasted
  • 2 garlic cloves
  • 1/4 cup olive oil
  • 2 tablespoons sherry vinegar
  • 1 teaspoon smoked paprika

Instructions

  1. Preheat the grill to medium-high heat.
  2. In a large bowl, toss the bell peppers, zucchini, red onion, and cherry tomatoes with 1/4 cup of olive oil. Season with salt and pepper.
  3. Thread the marinated vegetables onto the soaked skewers, alternating between the different vegetables.
  4. Place the vegetable skewers on the grill and cook for 10-12 minutes, turning occasionally, until the vegetables are tender and slightly charred.
  5. While the vegetables are grilling, prepare the Romesco sauce. In a food processor, combine the toasted almonds, garlic, 1/4 cup olive oil, sherry vinegar, smoked paprika, and salt. Blend until smooth.
