Ingredients
- 1 red bell pepper, cut into chunks

- 8 cherry tomatoes

- 8 wooden skewers, soaked in water for 30 minutes

- 2 garlic cloves
- 1/4 cup olive oil
- 2 tablespoons sherry vinegar
- 1 teaspoon smoked paprika

Instructions
- Preheat the grill to medium-high heat.
- In a large bowl, toss the bell peppers, zucchini, red onion, and cherry tomatoes with 1/4 cup of olive oil. Season with salt and pepper.
- Thread the marinated vegetables onto the soaked skewers, alternating between the different vegetables.
- Place the vegetable skewers on the grill and cook for 10-12 minutes, turning occasionally, until the vegetables are tender and slightly charred.
- While the vegetables are grilling, prepare the Romesco sauce. In a food processor, combine the toasted almonds, garlic, 1/4 cup olive oil, sherry vinegar, smoked paprika, and salt. Blend until smooth.
- Transfer the Romesco sauce to a serving bowl.
- Once the vegetable skewers are done, remove them from the grill and serve hot with the Romesco sauce on the side.
