Griot Ak Lalo (fried Pork With Pickled Onions)

Ingredients
- 2 lbs pork shoulder, cut into 2-inch pieces
- 1 cup orange juice
- 1/4 cup lime juice
- 4 garlic cloves, minced
- 1 tsp dried thyme
- 1 tsp salt
- 1/2 tsp black pepper
- 2 cups vegetable oil, for frying
- 2 large onions, thinly sliced
- 1 cup white vinegar
- 1 scotch bonnet pepper, thinly sliced (optional)
- 2 cups water
- Salt, to taste
Instructions
- In a large bowl, combine the pork pieces, orange juice, lime juice, garlic, thyme, salt, and black pepper. Marinate for at least 1 hour or overnight in the refrigerator.
- In a large skillet, heat the vegetable oil over medium-high heat. Fry the marinated pork pieces in batches until golden brown and crispy, about 8-10 minutes per batch. Drain on paper towels.
- In a separate bowl, combine the sliced onions, white vinegar, scotch bonnet pepper (if using), water, and salt. Let the onions pickle for at least 30 minutes.
- Serve the fried pork with the pickled onions on the side.
