Ingredients

  • 2 lbs pork shoulder, cut into 2-inch pieces
  • 1 cup orange juice
  • 1/4 cup lime juice
  • 4 garlic cloves, minced
  • 1 tsp dried thyme
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 cups vegetable oil, for frying
  • 2 large onions, thinly sliced
  • 1 cup white vinegar
  • 1 scotch bonnet pepper, thinly sliced (optional)
  • 2 cups water
  • Salt, to taste

Instructions

  1. In a large bowl, combine the pork pieces, orange juice, lime juice, garlic, thyme, salt, and black pepper. Marinate for at least 1 hour or overnight in the refrigerator.
  2. In a large skillet, heat the vegetable oil over medium-high heat. Fry the marinated pork pieces in batches until golden brown and crispy, about 8-10 minutes per batch. Drain on paper towels.
  3. In a separate bowl, combine the sliced onions, white vinegar, scotch bonnet pepper (if using), water, and salt. Let the onions pickle for at least 30 minutes.
  4. Serve the fried pork with the pickled onions on the side.
