Ingredients

  • 2 cups groundnuts, shelled and roasted
  • 1 onion, chopped
  • 2 tomatoes, diced
  • 1 bell pepper, chopped
  • 3 cups vegetable broth

  • 1 tsp cayenne pepper
  • Salt to taste

Instructions

  1. In a blender, grind the roasted groundnuts into a fine powder.
  2. In a large pot, sauté the chopped onion, tomatoes, and bell pepper until softened.
  3. Add the groundnut powder to the pot and stir to combine.
  4. Pour in the vegetable broth and bring the soup to a simmer.
  5. Stir in the peanut butter, cayenne pepper, and salt. Simmer for 30 minutes, stirring occasionally.
  6. Adjust seasoning to taste and serve hot.
