Ingredients
- 2 cups groundnuts, shelled and roasted
- 1 onion, chopped
- 2 tomatoes, diced
- 1 bell pepper, chopped
- 3 cups vegetable broth
- 1/2 cup peanut butter
- 1 tsp cayenne pepper
- Salt to taste
Instructions
- In a blender, grind the roasted groundnuts into a fine powder.
- In a large pot, sauté the chopped onion, tomatoes, and bell pepper until softened.
- Add the groundnut powder to the pot and stir to combine.
- Pour in the vegetable broth and bring the soup to a simmer.
- Stir in the peanut butter, cayenne pepper, and salt. Simmer for 30 minutes, stirring occasionally.
