Groundnut Soup, also known as Peanut Soup, is a popular dish in Liberian cuisine. This creamy and flavorful soup is made with ground peanuts and a variety of spices, creating a rich and satisfying meal.
Ingredients
- 2 cups ground peanuts
- 1 onion, chopped
- 3 garlic cloves, minced
- 1 teaspoon ginger, grated
- 1 teaspoon paprika
- 1 teaspoon cayenne pepper
- 4 cups chicken or vegetable broth
- 1 cup tomato sauce
- 1 pound chicken, cut into pieces
- Salt and pepper to taste
- 2 cups spinach, chopped
Instructions
- In a large pot, heat some oil over medium heat. Add the chopped onion, minced garlic, and grated ginger. Sauté until the onions are soft and translucent.
- Add the ground peanuts, paprika, and cayenne pepper to the pot. Stir constantly for about 5 minutes to roast the peanuts and release their oils.
- Pour in the chicken or vegetable broth and tomato sauce. Add the chicken pieces, season with salt and pepper, and bring the mixture to a boil. Reduce the heat and let it simmer for 45 minutes, stirring occasionally.
- Add the chopped spinach to the pot and cook for an additional 5 minutes until the spinach is wilted and the chicken is fully cooked.
- Adjust the seasoning if needed and serve the groundnut soup hot with rice or fufu.
