Ingredients

  • 2 cups ground peanuts
  • 1 onion, chopped
  • 3 garlic cloves, minced
  • 1 teaspoon ginger, grated
  • 1 teaspoon paprika
  • 1 teaspoon cayenne pepper
  • 4 cups chicken or vegetable broth
  • 1 cup tomato sauce
  • 1 pound chicken, cut into pieces
  • Salt and pepper to taste
  • 2 cups spinach, chopped

Instructions

  1. In a large pot, heat some oil over medium heat. Add the chopped onion, minced garlic, and grated ginger. Sauté until the onions are soft and translucent.
  2. Add the ground peanuts, paprika, and cayenne pepper to the pot. Stir constantly for about 5 minutes to roast the peanuts and release their oils.
  3. Pour in the chicken or vegetable broth and tomato sauce. Add the chicken pieces, season with salt and pepper, and bring the mixture to a boil. Reduce the heat and let it simmer for 45 minutes, stirring occasionally.
  4. Add the chopped spinach to the pot and cook for an additional 5 minutes until the spinach is wilted and the chicken is fully cooked.
  5. Adjust the seasoning if needed and serve the groundnut soup hot with rice or fufu.
