Ingredients

  • 2 cups groundnuts (peanuts)

Instructions

  1. In a large pot, dry roast the groundnuts over medium heat until they are golden brown, stirring frequently to prevent burning. Remove from the heat and allow to cool.
  2. Once cooled, grind the roasted groundnuts in a food processor or blender until they form a smooth paste.
  3. In the same pot, heat some oil over medium heat and sauté the onions, tomatoes, bell pepper, garlic, and ginger until they are soft and fragrant.

  5. Pour in the vegetable broth and bring the mixture to a simmer.
