Ingredients

  • 4 potatoes, boiled and diced
  • 1 onion, chopped
  • 4 slices of bacon, chopped
  • 4 eggs
  • 1 cup cooked beef or pork, diced
  • Salt and pepper to taste
  • 1 tablespoon butter

Instructions

  1. Heat the butter in a large skillet over medium heat.
  2. Add the chopped onion and bacon, and cook until the onion is translucent and the bacon is crispy.
  3. Add the diced potatoes and cooked meat to the skillet, and cook until the potatoes are golden brown.
  4. Make 4 wells in the potato mixture and crack an egg into each well. Cook until the eggs are done to your liking.
  5. Season with salt and pepper, and serve hot.
