Grybne Zapekane, also known as Cossack Mushroom and Potato Casserole, is a hearty and comforting dish from Cossack cuisine. This delicious casserole is made with layers of tender potatoes, savory mushrooms, and a creamy sauce, baked to perfection.
Ingredients
- 6 large potatoes, peeled and thinly sliced
- 1 onion, thinly sliced
- 2 cups mushrooms, sliced
- 2 cloves garlic, minced
- 1 cup vegetable broth
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions
- Preheat the oven to 375°F (190°C).
- In a skillet, heat the olive oil over medium heat. Add the onions and garlic, and sauté until softened.
- Add the mushrooms to the skillet and cook until they release their moisture and become tender. Season with salt and pepper.
- In a separate bowl, mix the vegetable broth and heavy cream. Season with salt and pepper.
- Layer half of the sliced potatoes in a greased baking dish. Top with half of the mushroom mixture. Pour half of the cream mixture over the mushrooms.
- Repeat the layers with the remaining potatoes, mushrooms, and cream mixture.
- Sprinkle the grated Parmesan cheese over the top.
- Cover the baking dish with foil and bake for 45 minutes. Then, remove the foil and bake for an additional 15 minutes, or until the potatoes are tender and the top is golden brown.
- Let the casserole rest for a few minutes before serving.
