Ingredients

  • 1 lb pork loin, cut into bite-sized pieces
  • 1/2 cup cornstarch
  • 1/4 cup all-purpose flour
  • 1 egg, beaten
  • 1 cup pineapple chunks
  • 1 red bell pepper, cut into chunks
  • 1 green bell pepper, cut into chunks
  • 1 onion, cut into chunks
  • 3 cloves garlic, minced
  • 1/2 cup ketchup
  • 1/4 cup white vinegar
  • 1/4 cup brown sugar
  • 1 tablespoon soy sauce
  • 1/2 cup water
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • Vegetable oil for frying

Instructions

  1. In a bowl, combine the cornstarch and flour. Dip the pork pieces in the beaten egg, then coat with the cornstarch-flour mixture.
  2. Heat vegetable oil in a pan over medium-high heat. Fry the coated pork pieces until golden brown and crispy. Remove from the pan and set aside.
  3. In a separate pan, sauté the garlic, onion, and bell peppers until they are slightly tender.
  4. Add the pineapple chunks, ketchup, vinegar, brown sugar, soy sauce, water, salt, and black pepper to the pan. Stir to combine and bring to a simmer.
  5. Add the fried pork pieces to the sweet and sour sauce, and toss to coat evenly. Cook for an additional 2-3 minutes.
  6. Serve the Gu Lou Yok hot with steamed rice.
