Ingredients
- 6 cups cubed white bread
- 2 cups coconut milk
- 1 cup sugar
- 4 eggs, beaten
- 1 teaspoon vanilla extract
- 1/2 teaspoon ground cinnamon
- 1/4 cup raisins (optional)
Instructions
- Preheat the oven to 350°F (175°C).
- In a large bowl, combine the cubed bread and coconut milk. Let it sit for 10 minutes to allow the bread to soak up the milk.
- In another bowl, mix together the sugar, beaten eggs, vanilla extract, and ground cinnamon.
- Pour the egg mixture over the bread and stir to combine. Add the raisins if desired.
- Transfer the mixture to a greased baking dish and bake for 45 minutes, or until the pudding is set and golden brown on top.
