Ingredients
- 500g pork loin, cut into bite-sized pieces
- 1/2 cup cornstarch
- 2 eggs, beaten
- 1 cup bell peppers, diced
- 1 cup pineapple chunks
- 1/2 cup ketchup
- 1/4 cup rice vinegar
- 3 tbsp brown sugar
- 2 tbsp soy sauce
- 1 tsp ginger, minced
- 1 tsp garlic, minced
- 1/2 cup water
- 2 green onions, chopped (for garnish)
Instructions
- In a bowl, coat the pork pieces with cornstarch, then dip them in beaten eggs.
- Heat oil in a pan and fry the pork until crispy and golden brown. Remove and set aside.
- In the same pan, sauté bell peppers, pineapple chunks, ginger, and garlic.
- In a separate bowl, mix ketchup, rice vinegar, brown sugar, soy sauce, and water to make the sweet and sour sauce.
- Pour the sauce into the pan with the sautéed ingredients and bring to a simmer.
- Add the fried pork to the sauce and toss to coat.
- Garnish with chopped green onions and serve hot with steamed rice.
