Ingredients
- 2 lbs pork shoulder, cut into chunks
- 1 onion, finely chopped
- 3 tomatoes, diced

- 1 bell pepper, diced
- 2 carrots, sliced
- 2 potatoes, diced
- 1/2 cup rice vinegar
- 2 tbsp dried oregano
- 1 tsp cumin
- 1/2 tsp chili powder
- Salt and pepper to taste
- 3 cups chicken broth
Instructions
- In a large pot, brown the pork chunks over medium heat.
- Add the chopped onion, diced tomatoes, minced garlic, and diced bell pepper to the pot. Cook until the vegetables are softened.
- Stir in the carrots, potatoes, rice vinegar, dried oregano, cumin, chili powder, salt, and pepper.
- Pour in the chicken broth and bring the stew to a simmer. Cover and cook for 2 hours, or until the pork is tender.
