Ingredients

  • 2 lbs pork shoulder, cut into chunks
  • 1 onion, finely chopped
  • 3 tomatoes, diced
  • 3 cloves garlic, minced
  • 1 bell pepper, diced
  • 2 carrots, sliced
  • 2 potatoes, diced
  • 1/2 cup rice vinegar
  • 2 tbsp dried oregano
  • 1 tsp cumin
  • 1/2 tsp chili powder
  • Salt and pepper to taste
  • 3 cups chicken broth

Instructions

  1. In a large pot, brown the pork chunks over medium heat.
  2. Add the chopped onion, diced tomatoes, minced garlic, and diced bell pepper to the pot. Cook until the vegetables are softened.
  3. Stir in the carrots, potatoes, rice vinegar, dried oregano, cumin, chili powder, salt, and pepper.
  4. Pour in the chicken broth and bring the stew to a simmer. Cover and cook for 2 hours, or until the pork is tender.
