Ingredients
- 4 cups fresh corn kernels
- 1 cup whole milk

Instructions
- In a blender, puree 2 cups of the corn kernels with the milk until smooth.

- Cook over medium heat, stirring constantly, until the mixture thickens, about 15-20 minutes.
- In a separate bowl, beat the eggs and vanilla extract together. Slowly pour the hot corn mixture into the egg mixture, stirring constantly.
- Return the mixture to the saucepan and cook for an additional 5 minutes, stirring constantly, until thickened.
- Pour the pudding into a serving dish and let it cool to room temperature. Then refrigerate for at least 2 hours before serving.
