Ingredients
- 3 cups masa harina (corn flour)
- 1 cup chicken broth
- 1/2 cup lard or vegetable shortening
- 1 teaspoon baking powder
- 1 teaspoon salt
- 12 pieces banana leaves, cut into 10x10 inch squares
- 2 cups cooked and shredded chicken
- 1 cup tomato sauce
- 1/2 cup raisins
- 1/2 cup sliced olives
- 1/2 cup capers
Instructions
- In a large bowl, mix the masa harina, chicken broth, lard, baking powder, and salt to form a smooth dough.
- Place a spoonful of the dough in the center of each banana leaf square.
- Top the dough with a spoonful of the shredded chicken, tomato sauce, raisins, olives, and capers.
- Wrap the banana leaves around the filling to form rectangular packages and tie with kitchen twine.
- In a large pot, arrange the tamales and steam over medium heat for 1 hour.
- Let the tamales cool for a few minutes before serving.
