Guatemalan Tamales (chuchitos)

Ingredients

  • 3 cups masa harina (corn flour)
  • 1 cup chicken broth
  • 1/2 cup lard or vegetable shortening
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 12 pieces banana leaves, cut into 10x10 inch squares
  • 2 cups cooked and shredded chicken
  • 1 cup tomato sauce
  • 1/2 cup raisins
  • 1/2 cup sliced olives
  • 1/2 cup capers

Instructions

  1. In a large bowl, mix the masa harina, chicken broth, lard, baking powder, and salt to form a smooth dough.
  2. Place a spoonful of the dough in the center of each banana leaf square.
  3. Top the dough with a spoonful of the shredded chicken, tomato sauce, raisins, olives, and capers.
  4. Wrap the banana leaves around the filling to form rectangular packages and tie with kitchen twine.
  5. In a large pot, arrange the tamales and steam over medium heat for 1 hour.
  6. Let the tamales cool for a few minutes before serving.
