Guatemalan Vegetable Soup (chojín)

Ingredients

  • 2 tablespoons vegetable oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2 carrots, diced
  • 2 potatoes, peeled and cubed
  • 2 tomatoes, chopped
  • 1 bell pepper, diced
  • 6 cups vegetable broth
  • 1 cup corn kernels
  • 1 cup green beans, trimmed and cut into 1-inch pieces
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat the vegetable oil over medium heat.
  2. Add the chopped onion and minced garlic, and sauté until the onion is translucent.
  3. Add the diced carrots, cubed potatoes, chopped tomatoes, and diced bell pepper to the pot. Cook for 5 minutes, stirring occasionally.
  4. Pour in the vegetable broth and bring the soup to a boil.
  5. Reduce the heat to low, cover the pot, and simmer for 20 minutes.
  6. Add the corn kernels and green beans to the pot, and cook for an additional 10 minutes.
  7. Season the soup with salt and pepper to taste.
