Ingredients
- 2 tablespoons vegetable oil
- 1 onion, chopped
- 3 cloves garlic, minced
- 2 carrots, diced
- 2 potatoes, peeled and cubed
- 2 tomatoes, chopped
- 1 bell pepper, diced
- 6 cups vegetable broth
- 1 cup corn kernels
- 1 cup green beans, trimmed and cut into 1-inch pieces
- Salt and pepper to taste
Instructions
- In a large pot, heat the vegetable oil over medium heat.
- Add the chopped onion and minced garlic, and sauté until the onion is translucent.
- Add the diced carrots, cubed potatoes, chopped tomatoes, and diced bell pepper to the pot. Cook for 5 minutes, stirring occasionally.
- Pour in the vegetable broth and bring the soup to a boil.
- Reduce the heat to low, cover the pot, and simmer for 20 minutes.
- Add the corn kernels and green beans to the pot, and cook for an additional 10 minutes.
- Season the soup with salt and pepper to taste.
