Ingredients
- 2 cups of young jackfruit, shredded
- 1 cup of coconut milk
- 4 hard-boiled eggs
- 1 cup of palm sugar
- 4 bay leaves
- 4 cloves of garlic, minced
- 4 shallots, sliced
- 1 teaspoon of coriander seeds
- 1 teaspoon of galangal powder
- 1 teaspoon of salt
- 4 cups of water
Instructions
- Prepare the jackfruit by shredding it into small pieces.
- In a large pot, combine the shredded jackfruit, coconut milk, palm sugar, bay leaves, garlic, shallots, coriander seeds, galangal powder, salt, and water.
- Bring the mixture to a boil over medium heat, then reduce the heat to low and simmer for 3 hours, stirring occasionally.
- Add the hard-boiled eggs to the pot and continue to simmer for an additional hour.
- Once the gudeg is thick and the flavors have melded together, remove the bay leaves and serve the gudeg warm.
