Ingredients

  • 2 cups of young jackfruit, shredded
  • 1 cup of coconut milk
  • 4 hard-boiled eggs
  • 1 cup of palm sugar
  • 4 bay leaves
  • 4 cloves of garlic, minced
  • 4 shallots, sliced
  • 1 teaspoon of coriander seeds
  • 1 teaspoon of galangal powder
  • 1 teaspoon of salt
  • 4 cups of water

Instructions

  1. Prepare the jackfruit by shredding it into small pieces.
  2. In a large pot, combine the shredded jackfruit, coconut milk, palm sugar, bay leaves, garlic, shallots, coriander seeds, galangal powder, salt, and water.
  3. Bring the mixture to a boil over medium heat, then reduce the heat to low and simmer for 3 hours, stirring occasionally.
  4. Add the hard-boiled eggs to the pot and continue to simmer for an additional hour.
  5. Once the gudeg is thick and the flavors have melded together, remove the bay leaves and serve the gudeg warm.
