Gui Shan Jun Jun Tang, or Guizhou Mountain Mushroom Soup, is a traditional dish from the Guizhou province in China. This hearty and flavorful soup is made with a variety of local mushrooms and aromatic herbs, creating a comforting and nourishing meal.
Ingredients
- 500g mixed local mushrooms (such as shiitake, oyster, and wood ear mushrooms)
- 1 onion, finely chopped
- 3 cloves garlic, minced
- 1 inch ginger, sliced
- 4 cups vegetable broth
- 2 tbsp soy sauce
- 1 tsp sesame oil
- 1 tsp sugar
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- Heat a large pot over medium heat. Add the chopped onion, garlic, and ginger. Sauté until fragrant.
- Add the mixed mushrooms to the pot and cook until they start to release their juices.
- Pour in the vegetable broth and bring the soup to a simmer. Let it cook for 30 minutes.
- Stir in the soy sauce, sesame oil, sugar, salt, and pepper. Adjust the seasoning to taste.
- Divide the soup into bowls, garnish with fresh cilantro, and serve hot.
