Gui Zhou Chao Fan (guizhou Style Fried Rice)

Ingredients

  • 3 cups cooked white rice
  • 2 eggs, beaten
  • 1/2 cup diced carrots
  • 1/2 cup diced bell peppers
  • 1/2 cup diced onions
  • 1/4 cup diced Chinese sausage
  • 2 tablespoons soy sauce
  • 1 tablespoon chili oil
  • 1 teaspoon Sichuan peppercorns
  • 1/4 cup chopped scallions

Instructions

  1. Heat a wok or large skillet over high heat. Add a tablespoon of oil and swirl to coat the pan.
  2. Pour the beaten eggs into the pan and scramble until just set. Remove the eggs from the pan and set aside.
  3. Heat another tablespoon of oil in the pan. Add the Chinese sausage and stir-fry for 2 minutes.
  4. Add the carrots, bell peppers, and onions to the pan. Stir-fry for 3-4 minutes until the vegetables are tender-crisp.
  5. Stir in the cooked rice, soy sauce, chili oil, and Sichuan peppercorns. Cook for 2-3 minutes, stirring constantly.
  6. Return the scrambled eggs to the pan and stir to combine with the rice mixture.
  7. Remove the pan from the heat and stir in the chopped scallions.
  8. Transfer the fried rice to a serving dish and serve hot.
