Ingredients
- 3 cups cooked white rice
- 2 eggs, beaten
- 1/2 cup diced carrots
- 1/2 cup diced bell peppers
- 1/2 cup diced onions
- 1/4 cup diced Chinese sausage
- 2 tablespoons soy sauce
- 1 tablespoon chili oil
- 1 teaspoon Sichuan peppercorns
- 1/4 cup chopped scallions
Instructions
- Heat a wok or large skillet over high heat. Add a tablespoon of oil and swirl to coat the pan.
- Pour the beaten eggs into the pan and scramble until just set. Remove the eggs from the pan and set aside.
- Heat another tablespoon of oil in the pan. Add the Chinese sausage and stir-fry for 2 minutes.
- Add the carrots, bell peppers, and onions to the pan. Stir-fry for 3-4 minutes until the vegetables are tender-crisp.
- Stir in the cooked rice, soy sauce, chili oil, and Sichuan peppercorns. Cook for 2-3 minutes, stirring constantly.
- Return the scrambled eggs to the pan and stir to combine with the rice mixture.
- Remove the pan from the heat and stir in the chopped scallions.
- Transfer the fried rice to a serving dish and serve hot.
