Ingredients

  • 500g thinly sliced beef
  • 300g firm tofu, cubed
  • 200g enoki mushrooms
  • 150g Chinese cabbage, sliced
  • 100g mung bean noodles
  • 4 cups of chicken or beef broth
  • 4 cloves of garlic, minced
  • 3 green onions, chopped
  • 2 tbsp Sichuan peppercorns
  • 2 tbsp chili bean paste
  • 2 tbsp soy sauce
  • 1 tbsp vegetable oil
  • 1 tsp sugar
  • 1/2 tsp salt

Instructions

  1. In a large pot, heat the vegetable oil over medium heat. Add the garlic, green onions, Sichuan peppercorns, and chili bean paste. Cook for 2-3 minutes until fragrant.
  2. Pour in the chicken or beef broth and bring to a boil.
  3. Add the soy sauce, sugar, and salt to the broth. Then add the beef, tofu, enoki mushrooms, Chinese cabbage, and mung bean noodles. Cook for 5-7 minutes until the beef is cooked and the vegetables are tender.
  4. Transfer the hot pot to a tabletop burner and keep it simmering while serving.
