Ingredients

  • 1 block of firm tofu, cubed
  • 2 tablespoons vegetable oil
  • 3 cloves garlic, minced
  • 1 tablespoon ginger, grated
  • 2 green onions, chopped
  • 2 tablespoons doubanjiang (spicy broad bean paste)
  • 4 cups vegetable broth
  • 1 tablespoon soy sauce
  • 1 teaspoon sugar
  • 1 teaspoon Sichuan peppercorns
  • 1 teaspoon chili flakes
  • Salt to taste
  • 1 tablespoon cornstarch mixed with 2 tablespoons water (slurry)

Instructions

  1. Heat the vegetable oil in a pot over medium heat. Add the garlic, ginger, and green onions. Sauté for 1-2 minutes.
  2. Add the doubanjiang and cook for another 2 minutes.
  3. Pour in the vegetable broth, soy sauce, sugar, Sichuan peppercorns, and chili flakes. Bring to a simmer.
  4. Add the cubed tofu and let it simmer for 10-15 minutes.
  5. Season with salt to taste. Then, stir in the cornstarch slurry to thicken the soup.
  6. Serve hot and garnish with additional green onions, if desired.
