Ingredients
- 1 block of firm tofu, cubed
- 2 tablespoons vegetable oil
- 3 cloves garlic, minced
- 1 tablespoon ginger, grated
- 2 green onions, chopped
- 2 tablespoons doubanjiang (spicy broad bean paste)
- 4 cups vegetable broth
- 1 tablespoon soy sauce
- 1 teaspoon sugar
- 1 teaspoon Sichuan peppercorns
- 1 teaspoon chili flakes
- Salt to taste
- 1 tablespoon cornstarch mixed with 2 tablespoons water (slurry)
Instructions
- Heat the vegetable oil in a pot over medium heat. Add the garlic, ginger, and green onions. Sauté for 1-2 minutes.
- Add the doubanjiang and cook for another 2 minutes.
- Pour in the vegetable broth, soy sauce, sugar, Sichuan peppercorns, and chili flakes. Bring to a simmer.
- Add the cubed tofu and let it simmer for 10-15 minutes.
- Season with salt to taste. Then, stir in the cornstarch slurry to thicken the soup.
- Serve hot and garnish with additional green onions, if desired.
