Gui Zhou Zheng Yu Tou is a traditional dish from Guizhou Cuisine, featuring a steamed fish head with a flavorful and spicy sauce.
Ingredients
- 1 large fish head
- 3 tbsp soy sauce
- 2 tbsp rice wine
- 1 tbsp sugar
- 1 tbsp ginger, minced
- 2 cloves garlic, minced
- 2-3 red chilies, sliced
- 1 green onion, chopped
- 1 tsp Sichuan peppercorns
- 1 tsp sesame oil
- 1/2 cup chicken broth
Instructions
- Clean the fish head and place it on a heatproof plate.
- In a small bowl, mix soy sauce, rice wine, sugar, ginger, garlic, red chilies, green onion, Sichuan peppercorns, and sesame oil.
- Pour the mixture over the fish head and let it marinate for 15 minutes.
- Pour chicken broth into a steamer and bring to a boil.
- Place the plate with the fish head into the steamer and steam for 20-25 minutes.
- Serve hot with steamed rice.
