Ingredients

  • 1 large fish head
  • 3 tbsp soy sauce
  • 2 tbsp rice wine
  • 1 tbsp sugar
  • 1 tbsp ginger, minced
  • 2 cloves garlic, minced
  • 2-3 red chilies, sliced
  • 1 green onion, chopped
  • 1 tsp Sichuan peppercorns
  • 1 tsp sesame oil
  • 1/2 cup chicken broth

Instructions

  1. Clean the fish head and place it on a heatproof plate.
  2. In a small bowl, mix soy sauce, rice wine, sugar, ginger, garlic, red chilies, green onion, Sichuan peppercorns, and sesame oil.
  3. Pour the mixture over the fish head and let it marinate for 15 minutes.
  4. Pour chicken broth into a steamer and bring to a boil.
  5. Place the plate with the fish head into the steamer and steam for 20-25 minutes.
  6. Serve hot with steamed rice.
