Guinea Fowl in Tomato Sauce, known as Heavenly Ibihaza in Burundian cuisine, is a delicious and flavorful dish that is perfect for a special occasion or a family dinner.
Ingredients
- 1 whole guinea fowl, cut into pieces
- 2 tablespoons vegetable oil
- 1 onion, finely chopped
- 3 garlic cloves, minced
- 2 cups tomato puree
- 1 teaspoon paprika
- 1 teaspoon cayenne pepper
- Salt and pepper to taste
- 2 cups chicken broth
- 2 tablespoons chopped fresh parsley
Instructions
- Heat the vegetable oil in a large pot over medium heat.
- Add the guinea fowl pieces and brown on all sides, then remove from the pot and set aside.
- In the same pot, add the chopped onion and garlic, and sauté until softened.
- Pour in the tomato puree, paprika, cayenne pepper, salt, and pepper. Stir to combine.
- Return the guinea fowl pieces to the pot and add the chicken broth. Bring to a simmer, then cover and cook for 45-50 minutes, or until the guinea fowl is tender.
- Sprinkle with chopped parsley before serving.
