Guinea Pig Empanadas (cuy Empanadas)
Guinea Pig Empanadas, also known as Cuy Empanadas, are a traditional dish in Inca cuisine. These savory pastries are filled with tender guinea pig meat and seasoned with aromatic herbs and spices, creating a unique and flavorful snack or meal.
Ingredients
- 2 cups cooked guinea pig meat, shredded
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1 teaspoon cumin
- 1 teaspoon paprika
- 1/2 teaspoon dried oregano
- Salt and pepper to taste
- 3 tablespoons vegetable oil
- 12 empanada discs (store-bought or homemade)
Instructions
- In a skillet, heat the vegetable oil over medium heat. Add the chopped onion and minced garlic, and cook until softened.
- Add the shredded guinea pig meat to the skillet and season with cumin, paprika, dried oregano, salt, and pepper. Cook for 5-7 minutes, stirring occasionally, until the meat is heated through and well-seasoned.
- Preheat the oven to 375°F (190°C).
- Place a spoonful of the guinea pig filling in the center of each empanada disc. Fold the dough over the filling to create a half-moon shape, then crimp the edges with a fork to seal.
- Place the empanadas on a baking sheet lined with parchment paper. Brush the tops with a beaten egg for a golden finish.
- Bake the empanadas for 20-25 minutes, or until the crust is golden brown and crispy.
- Serve the guinea pig empanadas hot and enjoy!
