Guinea Pig Empanadas (cuy Empanadas)

Ingredients

  • 2 cups cooked guinea pig meat, shredded
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon dried oregano
  • Salt and pepper to taste
  • 3 tablespoons vegetable oil
  • 12 empanada discs (store-bought or homemade)

Instructions

  1. In a skillet, heat the vegetable oil over medium heat. Add the chopped onion and minced garlic, and cook until softened.
  2. Add the shredded guinea pig meat to the skillet and season with cumin, paprika, dried oregano, salt, and pepper. Cook for 5-7 minutes, stirring occasionally, until the meat is heated through and well-seasoned.
  3. Preheat the oven to 375°F (190°C).
  4. Place a spoonful of the guinea pig filling in the center of each empanada disc. Fold the dough over the filling to create a half-moon shape, then crimp the edges with a fork to seal.
  5. Place the empanadas on a baking sheet lined with parchment paper. Brush the tops with a beaten egg for a golden finish.
  6. Bake the empanadas for 20-25 minutes, or until the crust is golden brown and crispy.
  7. Serve the guinea pig empanadas hot and enjoy!
