Ingredients
- 1.5 lbs stewing beef, cubed
- 2 tbsp flour
- 2 tbsp vegetable oil
- 1 large onion, chopped
- 2 cloves garlic, minced
- 1 cup sliced mushrooms
- 1 cup Guinness beer
- 1 cup beef broth
- 2 tbsp tomato paste
- 1 tsp thyme
- Salt and pepper to taste
- 2 sheets of puff pastry
- 1 egg, beaten (for egg wash)
Instructions
- In a bowl, coat the beef cubes with flour and season with salt and pepper.
- Heat the vegetable oil in a large pot over medium-high heat. Brown the beef in batches and set aside.
- Add the chopped onion, garlic, and mushrooms to the pot. Cook until softened.
- Pour in the Guinness beer and beef broth, then stir in the tomato paste and thyme. Return the beef to the pot.
- Simmer the mixture for 1.5 hours, or until the beef is tender and the sauce has thickened.
- Preheat the oven to 375°F (190°C).
- Transfer the beef filling to a pie dish. Cover with a sheet of puff pastry, trimming any excess. Brush the pastry with the beaten egg.
- Bake for 25-30 minutes, or until the pastry is golden and puffed.
