Ingredients

  • 1 whole chicken, cut into pieces
  • 1 pound okra, trimmed and sliced
  • 2 onions, chopped
  • 3 tomatoes, diced
  • 4 cloves garlic, minced
  • 1 teaspoon ground ginger
  • 1 teaspoon paprika
  • 1 teaspoon dried thyme
  • 2 bay leaves
  • 2 cups chicken broth
  • Salt and pepper to taste
  • 2 tablespoons vegetable oil

Instructions

  1. Season the chicken pieces with salt, pepper, paprika, and ground ginger.
  2. Heat the vegetable oil in a large pot over medium heat. Add the seasoned chicken and brown on all sides. Remove the chicken from the pot and set aside.
  3. In the same pot, add the chopped onions and cook until softened. Add the minced garlic, diced tomatoes, and dried thyme. Cook for a few minutes until the tomatoes break down.
  4. Return the browned chicken pieces to the pot. Add the chicken broth and bay leaves. Bring to a simmer, then cover and cook for 30 minutes.
  5. Add the sliced okra to the pot and continue to cook for another 15-20 minutes, or until the okra is tender.
  6. Adjust the seasoning with salt and pepper, if needed. Serve the Guisado de Frango e Quiabo hot with rice or crusty bread.
