Ingredients
- 1 whole chicken, cut into pieces
- 1 pound okra, trimmed and sliced
- 2 onions, chopped
- 3 tomatoes, diced
- 4 cloves garlic, minced
- 1 teaspoon ground ginger
- 1 teaspoon paprika
- 1 teaspoon dried thyme
- 2 bay leaves
- 2 cups chicken broth
- Salt and pepper to taste
- 2 tablespoons vegetable oil
Instructions
- Season the chicken pieces with salt, pepper, paprika, and ground ginger.
- Heat the vegetable oil in a large pot over medium heat. Add the seasoned chicken and brown on all sides. Remove the chicken from the pot and set aside.
- In the same pot, add the chopped onions and cook until softened. Add the minced garlic, diced tomatoes, and dried thyme. Cook for a few minutes until the tomatoes break down.
- Return the browned chicken pieces to the pot. Add the chicken broth and bay leaves. Bring to a simmer, then cover and cook for 30 minutes.
- Add the sliced okra to the pot and continue to cook for another 15-20 minutes, or until the okra is tender.
- Adjust the seasoning with salt and pepper, if needed. Serve the Guisado de Frango e Quiabo hot with rice or crusty bread.
