Ingredients
- 1 lb fresh fish fillets, cut into chunks
- 1 lb fresh okra, trimmed and sliced
- 1 onion, chopped
- 3 tomatoes, chopped
- 3 cloves garlic, minced
- 1 tsp ground ginger
- 1 tsp ground coriander
- 1/2 tsp cayenne pepper
- 2 cups fish or vegetable broth
- 2 tbsp palm oil
- Salt and pepper to taste
Instructions
- In a large pot, heat the palm oil over medium heat.
- Add the chopped onion and minced garlic, and sauté until the onion is translucent.
- Add the chopped tomatoes, ground ginger, ground coriander, and cayenne pepper. Cook for 5 minutes, stirring occasionally.
- Add the fish chunks and cook for 5 minutes, stirring gently to avoid breaking the fish.
- Pour in the fish or vegetable broth and bring the stew to a simmer.
- Add the sliced okra to the pot and simmer for 20-25 minutes, or until the okra is tender.
- Season with salt and pepper to taste.
- Serve the Guisado de Quiabo e Peixe hot with steamed rice or crusty bread.
