Ingredients

  • 3 tomatoes, chopped
  • 3 cloves garlic, minced
  • 1 tsp ground ginger
  • 1 tsp ground coriander
  • 1/2 tsp cayenne pepper
  • 2 cups fish or vegetable broth
  • 2 tbsp palm oil
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat the palm oil over medium heat.
  2. Add the chopped onion and minced garlic, and sauté until the onion is translucent.
  3. Add the chopped tomatoes, ground ginger, ground coriander, and cayenne pepper. Cook for 5 minutes, stirring occasionally.
  4. Add the fish chunks and cook for 5 minutes, stirring gently to avoid breaking the fish.
  5. Pour in the fish or vegetable broth and bring the stew to a simmer.
  6. Add the sliced okra to the pot and simmer for 20-25 minutes, or until the okra is tender.
  7. Season with salt and pepper to taste.
  8. Serve the Guisado de Quiabo e Peixe hot with steamed rice or crusty bread.
