Ingredients
- 2 lbs beef chuck, cut into cubes
- 2 onions, chopped
- 3 garlic cloves, minced
- 2 carrots, sliced
- 2 potatoes, diced
- 1 red bell pepper, chopped
- 1 cup frozen peas
- 2 cups beef broth
- 1 cup red wine
- 2 tbsp tomato paste
- 2 bay leaves
- Salt and pepper to taste
Instructions
- In a large pot, brown the beef cubes over medium-high heat.
- Add the onions and garlic, and cook until softened.
- Stir in the carrots, potatoes, and red bell pepper.
- Pour in the beef broth, red wine, and tomato paste. Add the bay leaves, salt, and pepper.
- Bring the stew to a boil, then reduce the heat and let it simmer for 1.5 to 2 hours, or until the beef is tender.
- Add the frozen peas during the last 10 minutes of cooking.
- Adjust the seasoning if needed and serve hot.
