Ingredients
- 2 lbs chicken, cut into pieces
- 2 tablespoons vegetable oil
- 1 onion, chopped
- 3 garlic cloves, minced
- 1 bell pepper, diced
- 2 tomatoes, chopped
- 1 teaspoon cumin
- 1 teaspoon dried oregano
- 2 cups chicken broth
- Salt and pepper to taste
Instructions
- Season the chicken pieces with salt and pepper.
- In a large pot, heat the vegetable oil over medium heat.
- Add the chicken pieces and brown them on all sides. Remove and set aside.
- In the same pot, sauté the onion, garlic, and bell pepper until softened.
- Add the tomatoes, cumin, and oregano. Cook for a few minutes until the tomatoes break down.
- Return the chicken to the pot and pour in the chicken broth.
- Bring the stew to a simmer, cover, and cook for 45-50 minutes, or until the chicken is tender.
- Adjust the seasoning with salt and pepper, if needed.
