Gujarati-style Aloo Paratha

Ingredients
- 2 cups whole wheat flour
- 4 medium potatoes, boiled and mashed
- 1 onion, finely chopped
- 2 green chilies, finely chopped
- 1 tsp ginger, grated
- 1 tsp cumin seeds
- 1 tsp garam masala
- 1 tsp coriander powder
- 1/2 tsp turmeric powder
- Salt to taste
- 2 tbsp fresh coriander, chopped
- Ghee or oil for cooking
Instructions
- In a bowl, mix the whole wheat flour with water to make a soft dough. Cover and let it rest for 15 minutes.
- In another bowl, mix the mashed potatoes, onion, green chilies, ginger, cumin seeds, garam masala, coriander powder, turmeric powder, salt, and fresh coriander to make the stuffing.
- Divide the dough into equal-sized balls and roll each ball into a small circle. Place a portion of the potato stuffing in the center and seal the edges to form a stuffed ball.
- Flatten the stuffed ball and roll it out into a paratha, dusting with flour as needed.
- Heat a griddle or non-stick pan over medium heat and cook the paratha on both sides, applying ghee or oil until golden brown spots appear.
- Repeat with the remaining dough and stuffing to make more parathas.
- Serve hot with yogurt, pickle, or chutney.
