Gujarati-style Biryani Bonanza

Ingredients

  • 2 cups basmati rice
  • 1 cup mixed vegetables (carrots, peas, potatoes)
  • 1 onion, thinly sliced
  • 1 tomato, chopped
  • 1/2 cup yogurt
  • 2 tbsp ghee (clarified butter)
  • 1 tsp cumin seeds
  • 1 cinnamon stick
  • 4-5 cloves
  • 2-3 green cardamom pods
  • 1 bay leaf
  • 1/2 tsp turmeric powder
  • 1 tsp red chili powder
  • 1 tsp garam masala
  • Salt to taste
  • Fresh cilantro leaves for garnish

Instructions

  1. Rinse the basmati rice and soak it in water for 30 minutes.
  2. Heat ghee in a large pot and add the cumin seeds, cinnamon, cloves, cardamom, and bay leaf. Sauté until fragrant.
  3. Add the sliced onion and cook until golden brown.
  4. Add the mixed vegetables and sauté for a few minutes.
  5. Stir in the chopped tomato, turmeric, red chili powder, and salt. Cook until the tomatoes are soft.
  6. Whisk the yogurt and garam masala together, then add it to the pot. Cook for a few minutes.
  7. Drain the soaked rice and add it to the pot. Mix gently to coat the rice with the masala.
  8. Pour in 3 1/2 cups of water, cover the pot, and cook until the rice is tender and the water is absorbed.
  9. Garnish with fresh cilantro leaves and serve hot.
