Ingredients
- 2 cups chickpeas, soaked overnight
- 2 onions, finely chopped
- 3 tomatoes, pureed
- 1 inch ginger, grated
- 3-4 garlic cloves, minced
- 2 green chilies, slit
- 1 teaspoon cumin seeds
- 1 teaspoon turmeric powder
- 2 teaspoons coriander powder
- 1 teaspoon garam masala
- 1 teaspoon red chili powder
- Salt to taste
- 2 cups all-purpose flour
- 1/2 cup yogurt
- 1 teaspoon sugar
- Oil for deep frying
Instructions
- Pressure cook the soaked chickpeas with salt until soft.
- Heat oil in a pan, add cumin seeds, and let them splutter.
- Add chopped onions, ginger, and garlic. Sauté until golden brown.
- Stir in the tomato puree and cook until the oil separates.
- Add turmeric, coriander powder, garam masala, red chili powder, and salt. Cook for a few minutes.
- Add the cooked chickpeas and simmer for 10-15 minutes.
- For the bhature, mix all-purpose flour, yogurt, sugar, and a pinch of salt. Knead into a soft dough and let it rest for 2 hours.
- Divide the dough into small balls and roll them into circles. Deep fry until golden brown.
- Serve the hot chole with bhature and enjoy!
