Gujarati-style Chole Bhature

Ingredients

  • 2 cups chickpeas, soaked overnight
  • 2 onions, finely chopped
  • 3 tomatoes, pureed
  • 1 inch ginger, grated
  • 3-4 garlic cloves, minced
  • 2 green chilies, slit
  • 1 teaspoon cumin seeds
  • 1 teaspoon turmeric powder
  • 2 teaspoons coriander powder
  • 1 teaspoon garam masala
  • 1 teaspoon red chili powder
  • Salt to taste
  • 2 cups all-purpose flour
  • 1/2 cup yogurt
  • 1 teaspoon sugar
  • Oil for deep frying

Instructions

  1. Pressure cook the soaked chickpeas with salt until soft.
  2. Heat oil in a pan, add cumin seeds, and let them splutter.
  3. Add chopped onions, ginger, and garlic. Sauté until golden brown.
  4. Stir in the tomato puree and cook until the oil separates.
  5. Add turmeric, coriander powder, garam masala, red chili powder, and salt. Cook for a few minutes.
  6. Add the cooked chickpeas and simmer for 10-15 minutes.
  7. For the bhature, mix all-purpose flour, yogurt, sugar, and a pinch of salt. Knead into a soft dough and let it rest for 2 hours.
  8. Divide the dough into small balls and roll them into circles. Deep fry until golden brown.
  9. Serve the hot chole with bhature and enjoy!
