Gujarati-style Paneer Butter Masala

Ingredients

  • 250g paneer, cubed
  • 2 tbsp butter
  • 1 cup onion, finely chopped
  • 1 cup tomato, pureed
  • 1 tbsp ginger-garlic paste
  • 1/2 cup cashew nuts, soaked and ground to a paste
  • 1/2 cup heavy cream
  • 1 tsp red chili powder
  • 1 tsp garam masala
  • 1 tsp sugar
  • Salt to taste
  • 2 tbsp fresh coriander leaves, chopped

Instructions

  1. Heat 1 tablespoon of butter in a pan and sauté the paneer cubes until they turn light golden brown. Remove the paneer from the pan and set aside.
  2. In the same pan, add the remaining butter and sauté the chopped onions until they turn golden brown.
  3. Add the ginger-garlic paste and sauté for a minute.
  4. Pour in the tomato puree and cook until the butter starts to separate from the tomato mixture.
  5. Add the cashew nut paste, red chili powder, garam masala, sugar, and salt. Mix well and cook for a few minutes.
  6. Pour in the heavy cream and mix until well combined.
  7. Add the sautéed paneer cubes and simmer for 5-7 minutes, allowing the flavors to blend together.
  8. Garnish with chopped coriander leaves and serve hot.
