Gujarati-style Pasta Party

Ingredients

  • 2 cups pasta
  • 1 cup mixed vegetables (carrots, peas, bell peppers)
  • 1 onion, finely chopped
  • 2 tomatoes, pureed
  • 1/2 tsp turmeric powder
  • 1 tsp cumin seeds
  • 1/2 tsp red chili powder
  • 1/2 tsp garam masala
  • 2 tbsp oil
  • Salt to taste

Instructions

  1. Boil the pasta according to package instructions. Drain and set aside.
  2. Heat oil in a pan and add cumin seeds. Once they splutter, add the chopped onion and sauté until golden brown.
  3. Add the pureed tomatoes, turmeric powder, red chili powder, and salt. Cook until the oil separates from the masala.
  4. Add the mixed vegetables and cook until they are tender.
  5. Add the boiled pasta and garam masala. Mix well and cook for a few more minutes.
  6. Garnish with fresh cilantro and serve hot.
