Gujarati-style Pav Bhaji

Gujarati-style Pav Bhaji

Ingredients

  • 4 medium potatoes, boiled and mashed
  • 1 cup mixed vegetables (peas, carrots, bell peppers), boiled and mashed
  • 2 tbsp oil
  • 1 onion, finely chopped
  • 1 green chili, finely chopped
  • 1 tsp ginger-garlic paste
  • 2 tomatoes, finely chopped
  • 2 tbsp pav bhaji masala
  • Salt to taste
  • 4 pav (bread rolls)
  • Butter for toasting

Instructions

  1. Heat oil in a pan and sauté the onions, green chili, and ginger-garlic paste until the onions are translucent.
  2. Add the tomatoes and cook until they turn soft and mushy.
  3. Stir in the pav bhaji masala and salt, then add the mashed potatoes and mixed vegetables. Mix well and cook for 5-7 minutes.
  4. Toast the pav with butter on a griddle until golden brown.
  5. Serve the hot pav bhaji with a dollop of butter, chopped onions, and a lemon wedge.
