Gujarati-style Pav Bhaji

Ingredients
- 4 medium potatoes, boiled and mashed
- 1 cup mixed vegetables (peas, carrots, bell peppers), boiled and mashed
- 2 tbsp oil
- 1 onion, finely chopped
- 1 green chili, finely chopped
- 1 tsp ginger-garlic paste
- 2 tomatoes, finely chopped
- 2 tbsp pav bhaji masala
- Salt to taste
- 4 pav (bread rolls)
- Butter for toasting
Instructions
- Heat oil in a pan and sauté the onions, green chili, and ginger-garlic paste until the onions are translucent.
- Add the tomatoes and cook until they turn soft and mushy.
- Stir in the pav bhaji masala and salt, then add the mashed potatoes and mixed vegetables. Mix well and cook for 5-7 minutes.
- Toast the pav with butter on a griddle until golden brown.
- Serve the hot pav bhaji with a dollop of butter, chopped onions, and a lemon wedge.
