Gujarati-style Vegetable Biryani
Gujarati-style Vegetable Biryani is a flavorful and aromatic rice dish that is popular in the Gujarati cuisine. This vegetarian biryani is packed with a variety of vegetables and fragrant spices, making it a delicious and satisfying meal.
Ingredients
- 2 cups basmati rice
- 1 large onion, thinly sliced
- 1 cup mixed vegetables (carrots, peas, green beans, cauliflower)
- 1/2 cup yogurt
- 1/4 cup chopped cilantro
- 1/4 cup chopped mint leaves
- 1 tablespoon ginger-garlic paste
- Whole spices (cinnamon, cloves, cardamom, bay leaves)
- 1 teaspoon cumin seeds
- 1 teaspoon turmeric powder
- 1 teaspoon red chili powder
- 1/2 teaspoon garam masala
- Salt to taste
- 2 tablespoons ghee (clarified butter) or oil
- Fried onions for garnish
Instructions
- Rinse the basmati rice until the water runs clear. Soak the rice in water for 30 minutes, then drain and set aside.
- In a large pot, heat ghee or oil over medium heat. Add the whole spices and cumin seeds, and sauté until fragrant.
- Add the sliced onions and cook until golden brown.
- Stir in the ginger-garlic paste, turmeric, red chili powder, and garam masala. Cook for 2 minutes.
- Add the mixed vegetables and cook for 5 minutes.
- In a bowl, whisk the yogurt with salt, cilantro, and mint leaves. Pour this mixture into the pot and cook for 2 minutes.
- Layer the soaked rice over the vegetable mixture. Pour 4 cups of water over the rice. Bring to a boil, then reduce the heat to low, cover, and cook for 15-20 minutes or until the rice is tender.
- Fluff the biryani with a fork and garnish with fried onions before serving.
