Ingredients
- 500g beef liver, sliced
- 250g beef tripe (ampela), cleaned and sliced
- 3 tablespoons oil
- 2 lemongrass stalks, bruised
- 4 kaffir lime leaves
- 1 turmeric leaf, torn
- 500ml coconut milk
- 500ml water
- Salt to taste
Instructions
- Heat the oil in a large pot over medium heat.
- Add the lemongrass, kaffir lime leaves, and turmeric leaf. Sauté until fragrant.
- Add the beef liver and tripe. Cook until the meat changes color.
- Pour in the coconut milk and water. Bring to a boil.
- Reduce the heat and simmer for 45-50 minutes, or until the liver and tripe are tender.
- Season with salt to taste.
- Serve hot with steamed rice.
