Gulai Ati Ampela Pedas (spicy Beef Liver Curry)

Ingredients

  • 500g beef liver, sliced
  • 250g beef tripe (ampela), cleaned and sliced
  • 3 tablespoons oil
  • 2 lemongrass stalks, bruised
  • 4 kaffir lime leaves
  • 1 turmeric leaf, torn
  • 500ml coconut milk
  • 500ml water
  • Salt to taste

Instructions

  1. Heat the oil in a large pot over medium heat.
  2. Add the lemongrass, kaffir lime leaves, and turmeric leaf. Sauté until fragrant.
  3. Add the beef liver and tripe. Cook until the meat changes color.
  4. Pour in the coconut milk and water. Bring to a boil.
  5. Reduce the heat and simmer for 45-50 minutes, or until the liver and tripe are tender.
  6. Season with salt to taste.
  7. Serve hot with steamed rice.
