Ingredients

  • 1 whole chicken, cut into pieces
  • 2 lemongrass stalks, bruised
  • 4 kaffir lime leaves
  • 3 red chilies, sliced
  • 5 shallots, finely chopped
  • 4 cloves garlic, minced
  • 1-inch galangal, sliced
  • 1 turmeric leaf, torn
  • 400ml coconut milk
  • 2 cups water
  • Salt to taste

Instructions

  1. In a large pot, combine the chicken, lemongrass, kaffir lime leaves, red chilies, shallots, garlic, galangal, and turmeric leaf.
  2. Pour in the coconut milk and water. Bring to a boil over medium heat.
  3. Reduce the heat and simmer for 1 hour, or until the chicken is tender and the flavors have melded together.
  4. Season with salt to taste.
  5. Serve the Gulai Ayam Pedas hot with steamed rice.
