Ingredients
- 1 whole chicken, cut into pieces
- 2 lemongrass stalks, bruised
- 4 kaffir lime leaves
- 3 red chilies, sliced
- 5 shallots, finely chopped
- 4 cloves garlic, minced
- 1-inch galangal, sliced
- 1 turmeric leaf, torn
- 400ml coconut milk
- 2 cups water
- Salt to taste
Instructions
- In a large pot, combine the chicken, lemongrass, kaffir lime leaves, red chilies, shallots, garlic, galangal, and turmeric leaf.
- Pour in the coconut milk and water. Bring to a boil over medium heat.
- Reduce the heat and simmer for 1 hour, or until the chicken is tender and the flavors have melded together.
- Season with salt to taste.
- Serve the Gulai Ayam Pedas hot with steamed rice.
