Ingredients
- 1 whole chicken, cut into pieces
- 4 lemongrass stalks, bruised
- 5 kaffir lime leaves
- 400ml coconut milk
- 2 tomatoes, cut into wedges
- 3 red chilies, sliced
- 4 shallots, finely chopped
- 4 cloves garlic, minced
- 1 inch galangal, sliced
- 1 inch ginger, sliced
- 2 tbsp vegetable oil
- 1 tsp turmeric powder
- 1 tsp coriander powder
- Salt to taste
- Sugar to taste
Instructions
- Heat vegetable oil in a large pot over medium heat.
- Add shallots, garlic, ginger, and galangal. Sauté until fragrant.
- Add turmeric powder and coriander powder. Stir well.
- Add chicken pieces and cook until they change color.
- Pour in the coconut milk and add lemongrass, kaffir lime leaves, and tomatoes.
- Season with salt and sugar. Simmer for 45 minutes until the chicken is tender and the flavors have melded together.
- Add sliced red chilies and cook for another 5 minutes.
- Remove from heat and serve hot with steamed rice.
