Ingredients

  • 1 whole chicken, cut into pieces
  • 4 lemongrass stalks, bruised
  • 5 kaffir lime leaves
  • 400ml coconut milk
  • 2 tomatoes, cut into wedges
  • 3 red chilies, sliced
  • 4 shallots, finely chopped
  • 4 cloves garlic, minced
  • 1 inch galangal, sliced
  • 1 inch ginger, sliced
  • 2 tbsp vegetable oil
  • 1 tsp turmeric powder
  • 1 tsp coriander powder
  • Salt to taste
  • Sugar to taste

Instructions

  1. Heat vegetable oil in a large pot over medium heat.
  2. Add shallots, garlic, ginger, and galangal. Sauté until fragrant.
  3. Add turmeric powder and coriander powder. Stir well.
  4. Add chicken pieces and cook until they change color.
  5. Pour in the coconut milk and add lemongrass, kaffir lime leaves, and tomatoes.
  6. Season with salt and sugar. Simmer for 45 minutes until the chicken is tender and the flavors have melded together.
  7. Add sliced red chilies and cook for another 5 minutes.
  8. Remove from heat and serve hot with steamed rice.
