Ingredients
- 1 whole chicken, cut into pieces
- 2 cups coconut milk
- 4 shallots, finely chopped
- 3 cloves garlic, minced
- 2 red chilies, sliced
- 1 inch galangal, sliced
- 2 lemongrass stalks, bruised
- 5 kaffir lime leaves
- 1 teaspoon turmeric powder
- 1 teaspoon coriander powder
- 1 teaspoon cumin powder
- Salt to taste
- Sugar to taste
- 2 tablespoons cooking oil
- 4 cups water
Instructions
- Heat the cooking oil in a large pot over medium heat.
- Add the shallots, garlic, red chilies, galangal, and lemongrass. Sauté until fragrant.
- Add the chicken pieces and cook until they change color.
- Pour in the coconut milk and water. Stir to combine.
- Add the turmeric powder, coriander powder, cumin powder, and kaffir lime leaves. Season with salt and sugar.
- Simmer over low heat for 45-50 minutes, or until the chicken is tender and the sauce has thickened.
- Remove from heat and serve hot with steamed rice.
