Ingredients

  • 500g beef tripe, cleaned and cut into small pieces
  • 2 shallots, finely chopped
  • 4 cloves garlic, minced
  • 2 red chilies, sliced
  • 1 stalk lemongrass, bruised
  • 3 kaffir lime leaves
  • 1 turmeric leaf, torn
  • 1 tomato, diced
  • 2 cups coconut milk
  • 2 cups water
  • Salt to taste

Instructions

  1. In a large pot, combine beef tripe, shallots, garlic, red chilies, lemongrass, kaffir lime leaves, turmeric leaf, and tomato.
  2. Pour in the coconut milk and water. Bring to a boil over medium heat.
  3. Reduce the heat to low, cover the pot, and let it simmer for 2 hours or until the beef tripe is tender.
  4. Season with salt to taste.
  5. Serve the Gulai Babat Pedas hot with steamed rice.
