- 1 turmeric leaf, torn
- 1 tomato, diced
- 2 cups coconut milk
- 2 cups water
- Salt to taste
Instructions
- In a large pot, combine beef tripe, shallots, garlic, red chilies, lemongrass, kaffir lime leaves, turmeric leaf, and tomato.
- Pour in the coconut milk and water. Bring to a boil over medium heat.
- Reduce the heat to low, cover the pot, and let it simmer for 2 hours or until the beef tripe is tender.
- Season with salt to taste.
