Gulai Cumi Pedas (spicy Coconut Milk Squid)

Ingredients

  • 500g squid, cleaned and cut into rings
  • 2 cups coconut milk
  • 4 shallots, finely chopped
  • 3 cloves garlic, minced
  • 2 red chilies, sliced
  • 1 lemongrass stalk, bruised
  • 2 kaffir lime leaves
  • 1 teaspoon turmeric powder
  • 1 teaspoon coriander powder
  • 1 teaspoon salt
  • 1 tablespoon tamarind paste
  • 2 tablespoons cooking oil
  • 2 cups water

Instructions

  1. Heat the cooking oil in a large pot over medium heat.
  2. Add the shallots, garlic, and red chilies. Sauté until fragrant.
  3. Add the turmeric powder, coriander powder, lemongrass, and kaffir lime leaves. Stir well.
  4. Add the squid and cook for 2-3 minutes.
  5. Pour in the coconut milk and water. Bring to a simmer.
  6. Add the tamarind paste and salt. Stir to combine.
  7. Simmer for 20-25 minutes until the squid is tender and the sauce has thickened.
  8. Serve hot with steamed rice.
