Gulai Cumi Pedas (spicy Coconut Milk Squid)
Gulai Cumi Pedas is a traditional dish from Makassar cuisine that features tender squid cooked in a rich and spicy coconut milk sauce. This dish is bursting with flavor and is perfect to serve with steamed rice.
Ingredients
- 500g squid, cleaned and cut into rings
- 2 cups coconut milk
- 4 shallots, finely chopped
- 3 cloves garlic, minced
- 2 red chilies, sliced
- 1 lemongrass stalk, bruised
- 2 kaffir lime leaves
- 1 teaspoon turmeric powder
- 1 teaspoon coriander powder
- 1 teaspoon salt
- 1 tablespoon tamarind paste
- 2 tablespoons cooking oil
- 2 cups water
Instructions
- Heat the cooking oil in a large pot over medium heat.
- Add the shallots, garlic, and red chilies. Sauté until fragrant.
- Add the turmeric powder, coriander powder, lemongrass, and kaffir lime leaves. Stir well.
- Add the squid and cook for 2-3 minutes.
- Pour in the coconut milk and water. Bring to a simmer.
- Add the tamarind paste and salt. Stir to combine.
- Simmer for 20-25 minutes until the squid is tender and the sauce has thickened.
- Serve hot with steamed rice.
