Gulai Daging Pedas (spicy Beef Stew)
Gulai Daging Pedas is a traditional spicy beef stew from Banjar Cuisine. This flavorful dish is perfect for those who enjoy a bit of heat in their meals.
Ingredients
- 1 kg beef, cut into cubes
- 5 shallots, finely chopped
- 4 cloves garlic, minced
- 3 red chilies, sliced
- 2 tomatoes, diced
- 2 lemongrass stalks, bruised
- 4 kaffir lime leaves
- 1-inch galangal, sliced
- 1 turmeric leaf, torn
- 1 1/2 cups coconut milk
- 2 cups water
- Salt to taste
Instructions
- Heat some oil in a pot and sauté the shallots, garlic, and red chilies until fragrant.
- Add the beef and cook until it changes color.
- Stir in the tomatoes, lemongrass, kaffir lime leaves, galangal, and turmeric leaf.
- Pour in the coconut milk and water. Bring to a boil, then reduce the heat and simmer for 2 hours or until the beef is tender.
- Season with salt to taste.
