Gulai Daging Pedas (spicy Beef Stew)

Ingredients

  • 1 kg beef, cut into cubes
  • 5 shallots, finely chopped
  • 4 cloves garlic, minced
  • 3 red chilies, sliced
  • 2 tomatoes, diced
  • 2 lemongrass stalks, bruised
  • 4 kaffir lime leaves
  • 1-inch galangal, sliced
  • 1 turmeric leaf, torn
  • 1 1/2 cups coconut milk
  • 2 cups water
  • Salt to taste

Instructions

  1. Heat some oil in a pot and sauté the shallots, garlic, and red chilies until fragrant.
  2. Add the beef and cook until it changes color.
  3. Stir in the tomatoes, lemongrass, kaffir lime leaves, galangal, and turmeric leaf.
  4. Pour in the coconut milk and water. Bring to a boil, then reduce the heat and simmer for 2 hours or until the beef is tender.
  5. Season with salt to taste.
