Ingredients
- 1 lb white fish fillets, such as snapper or grouper
- 2 tbsp Caribbean curry powder
- 1 onion, sliced
- 3 garlic cloves, minced
- 1 red bell pepper, sliced
- 1 cup coconut milk
- 2 tomatoes, diced
- 2 cups fish or vegetable broth
- 2 tbsp fresh cilantro, chopped
- Salt and pepper to taste
Instructions
- In a large pot, heat some oil over medium heat. Add the onion, garlic, and red bell pepper. Sauté until the vegetables are soft.
- Add the Caribbean curry powder and cook for another 2 minutes, stirring constantly.
- Pour in the coconut milk and fish or vegetable broth. Bring the mixture to a simmer.
- Gently add the fish fillets and diced tomatoes to the pot. Let the stew simmer for about 15-20 minutes, or until the fish is cooked through.
- Season with salt and pepper, and garnish with fresh cilantro before serving.
