Ingredients

  • 2 tbsp Caribbean curry powder
  • 1 onion, sliced
  • 3 garlic cloves, minced
  • 1 red bell pepper, sliced
  • 1 cup coconut milk
  • 2 tomatoes, diced
  • 2 cups fish or vegetable broth
  • 2 tbsp fresh cilantro, chopped
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat some oil over medium heat. Add the onion, garlic, and red bell pepper. Sauté until the vegetables are soft.
  2. Add the Caribbean curry powder and cook for another 2 minutes, stirring constantly.
