Ingredients
- 500g lamb, cut into chunks
- 2 onions, finely chopped
- 4 cloves garlic, minced
- 2 tomatoes, diced
- 3 red chilies, sliced
- 1 stalk lemongrass, bruised
- 4 kaffir lime leaves
- 1 cinnamon stick
- 4 cardamom pods
- 1 tsp turmeric powder
- 1 tsp coriander powder
- 1/2 tsp cumin powder
- 400ml coconut milk
- 2 cups water
- Salt to taste
- Sugar to taste
- 2 tbsp cooking oil
Instructions
- Heat the cooking oil in a large pot over medium heat.
- Add the onions and garlic, and sauté until fragrant.
- Add the lamb chunks and cook until browned.
- Stir in the turmeric, coriander, and cumin powder, then add the tomatoes, red chilies, lemongrass, kaffir lime leaves, cinnamon stick, and cardamom pods.
- Pour in the coconut milk and water. Season with salt and sugar.
- Simmer over low heat for 1.5 to 2 hours, or until the lamb is tender and the flavors have melded together.
- Serve the Gulai Kambing hot with steamed rice or flatbread.
