Ingredients

  • 500g lamb, cut into chunks
  • 2 onions, finely chopped
  • 4 cloves garlic, minced
  • 2 tomatoes, diced
  • 3 red chilies, sliced
  • 1 stalk lemongrass, bruised
  • 4 kaffir lime leaves
  • 1 cinnamon stick
  • 4 cardamom pods
  • 1 tsp turmeric powder
  • 1 tsp coriander powder
  • 1/2 tsp cumin powder
  • 400ml coconut milk
  • 2 cups water
  • Salt to taste
  • Sugar to taste
  • 2 tbsp cooking oil

Instructions

  1. Heat the cooking oil in a large pot over medium heat.
  2. Add the onions and garlic, and sauté until fragrant.
  3. Add the lamb chunks and cook until browned.
  4. Stir in the turmeric, coriander, and cumin powder, then add the tomatoes, red chilies, lemongrass, kaffir lime leaves, cinnamon stick, and cardamom pods.
  5. Pour in the coconut milk and water. Season with salt and sugar.
  6. Simmer over low heat for 1.5 to 2 hours, or until the lamb is tender and the flavors have melded together.
  7. Serve the Gulai Kambing hot with steamed rice or flatbread.
