Ingredients
- 1 kg lamb, cut into chunks

- 1 inch galangal, sliced
- 1 inch ginger, sliced
- 1 tsp turmeric powder

- 1/2 tsp fennel powder
- 1/2 tsp nutmeg powder
- 1/2 cup coconut milk
- 4 cups water
- Salt to taste
- Sugar to taste

Instructions
- Heat some cooking oil in a large pot over medium heat.
- Add the shallots and garlic, and sauté until fragrant.
- Add the lamb chunks and cook until browned.
- Add the tomatoes, red chilies, lemongrass, kaffir lime leaves, galangal, and ginger. Stir well.
- Add the turmeric, coriander, cumin, fennel, and nutmeg powder. Mix until the lamb is coated with the spices.
- Pour in the water and coconut milk. Bring to a boil, then reduce the heat and simmer for 1.5 to 2 hours, or until the lamb is tender.
- Season with salt and sugar to taste.
