Ingredients

  • 3 red chilies, sliced
  • 2 lemongrass stalks, bruised
  • 4 kaffir lime leaves
  • 1 inch galangal, sliced
  • 1 inch ginger, sliced
  • 1 tsp turmeric powder
  • 1 tsp coriander powder
  • 1/2 tsp cumin powder
  • 1/2 tsp fennel powder
  • 1/2 tsp nutmeg powder
  • 1/2 cup coconut milk
  • 4 cups water
  • Salt to taste
  • Sugar to taste
  • Cooking oil

Instructions

  1. Heat some cooking oil in a large pot over medium heat.
  2. Add the shallots and garlic, and sauté until fragrant.
  3. Add the lamb chunks and cook until browned.
  4. Add the tomatoes, red chilies, lemongrass, kaffir lime leaves, galangal, and ginger. Stir well.
  5. Add the turmeric, coriander, cumin, fennel, and nutmeg powder. Mix until the lamb is coated with the spices.
  6. Pour in the water and coconut milk. Bring to a boil, then reduce the heat and simmer for 1.5 to 2 hours, or until the lamb is tender.
  7. Season with salt and sugar to taste.
  8. Serve the Gulai Kambing Pedas hot with steamed rice or flatbread.
