Ingredients

  • 1 lb chicken, cut into pieces
  • 2 cups coconut milk
  • 4 shallots, finely chopped
  • 3 cloves garlic, minced
  • 2 red chilies, sliced
  • 1 inch galangal, sliced
  • 2 lemongrass stalks, bruised
  • 5 kaffir lime leaves
  • 1 tsp turmeric powder
  • 1 tsp coriander powder
  • 1 tsp cumin powder
  • 1 tsp salt
  • 1 tsp sugar
  • 2 tbsp cooking oil
  • 3 cups water

Instructions

  1. Heat the cooking oil in a large pot over medium heat. Add the shallots, garlic, red chilies, galangal, lemongrass, and kaffir lime leaves. Sauté until fragrant.
  2. Add the chicken pieces and cook until they are no longer pink.
  3. Stir in the turmeric powder, coriander powder, and cumin powder. Cook for another 2 minutes.
  4. Pour in the coconut milk and water. Bring to a simmer and cook for 30 minutes, stirring occasionally.
  5. Season with salt and sugar. Simmer for another 10 minutes until the chicken is tender and the flavors have melded together.
  6. Serve the Gulai Kelapa Pedas hot with steamed rice.
