Ingredients
- 1 lb chicken, cut into pieces
- 2 cups coconut milk
- 4 shallots, finely chopped
- 3 cloves garlic, minced
- 2 red chilies, sliced
- 1 inch galangal, sliced
- 2 lemongrass stalks, bruised
- 5 kaffir lime leaves
- 1 tsp turmeric powder
- 1 tsp coriander powder
- 1 tsp cumin powder
- 1 tsp salt
- 1 tsp sugar
- 2 tbsp cooking oil
- 3 cups water
Instructions
- Heat the cooking oil in a large pot over medium heat. Add the shallots, garlic, red chilies, galangal, lemongrass, and kaffir lime leaves. Sauté until fragrant.
- Add the chicken pieces and cook until they are no longer pink.
- Stir in the turmeric powder, coriander powder, and cumin powder. Cook for another 2 minutes.
- Pour in the coconut milk and water. Bring to a simmer and cook for 30 minutes, stirring occasionally.
- Season with salt and sugar. Simmer for another 10 minutes until the chicken is tender and the flavors have melded together.
- Serve the Gulai Kelapa Pedas hot with steamed rice.
