Ingredients

- 4 cups (1 liter) coconut milk
- 5 shallots, finely chopped
- 4 cloves garlic, minced
- 2 lemongrass stalks, bruised
- 4 kaffir lime leaves
- 3 red chilies, sliced
- 1 inch (2.5cm) galangal, sliced
- 1 inch (2.5cm) ginger, sliced
- 1 turmeric leaf, torn
- 1 teaspoon tamarind paste
- 1 teaspoon sugar
- Salt to taste
- 4 cups (1 liter) water
Instructions
- In a large pot, combine coconut milk, shallots, garlic, lemongrass, kaffir lime leaves, red chilies, galangal, ginger, turmeric leaf, tamarind paste, sugar, and salt.
- Add water and bring the mixture to a boil over medium heat.
- Add the crab pieces and simmer for 30-40 minutes until the crab is cooked and the flavors have infused.
- Adjust the seasoning with salt and sugar if needed.
