Ingredients

  • 2 lbs (900g) fresh crab, cleaned and cut into pieces
  • 4 cups (1 liter) coconut milk
  • 5 shallots, finely chopped
  • 4 cloves garlic, minced
  • 2 lemongrass stalks, bruised
  • 4 kaffir lime leaves
  • 3 red chilies, sliced
  • 1 inch (2.5cm) galangal, sliced
  • 1 inch (2.5cm) ginger, sliced
  • 1 turmeric leaf, torn
  • 1 teaspoon tamarind paste
  • 1 teaspoon sugar
  • Salt to taste
  • 4 cups (1 liter) water

Instructions

  1. In a large pot, combine coconut milk, shallots, garlic, lemongrass, kaffir lime leaves, red chilies, galangal, ginger, turmeric leaf, tamarind paste, sugar, and salt.
  2. Add water and bring the mixture to a boil over medium heat.
  3. Add the crab pieces and simmer for 30-40 minutes until the crab is cooked and the flavors have infused.
  4. Adjust the seasoning with salt and sugar if needed.
