Gulai Kepiting Santan Pedas (spicy Coconut Milk Crab Curry)

Ingredients

  • 1 kg fresh crab, cleaned and cut into pieces
  • 400ml coconut milk
  • 4 kaffir lime leaves
  • 2 lemongrass stalks, bruised
  • 4 red chilies, sliced
  • 5 shallots, finely chopped
  • 4 cloves garlic, minced
  • 1 inch galangal, sliced
  • 1 tsp turmeric powder
  • 1 tsp coriander powder
  • 1 tsp salt
  • 1 tsp sugar
  • 2 tbsp cooking oil
  • 500ml water

Instructions

  1. In a large pot, heat the cooking oil over medium heat. Sauté the shallots, garlic, red chilies, galangal, and lemongrass until fragrant.
  2. Add the turmeric powder and coriander powder, then stir well to combine.
  3. Pour in the coconut milk and water, then add the kaffir lime leaves and salt. Bring to a gentle simmer.
  4. Add the crab pieces to the pot and cook for about 15-20 minutes, or until the crab is fully cooked and the flavors have melded together.
  5. Season with sugar and adjust the salt if needed. Remove from heat and serve hot with steamed rice.
