Ingredients
- 1 kg fresh crab, cleaned and cut into pieces
- 400ml coconut milk
- 4 kaffir lime leaves
- 2 lemongrass stalks, bruised
- 4 red chilies, sliced
- 5 shallots, finely chopped
- 4 cloves garlic, minced
- 1 inch galangal, sliced
- 1 tsp turmeric powder
- 1 tsp coriander powder
- 1 tsp salt
- 1 tsp sugar
- 2 tbsp cooking oil
- 500ml water
Instructions
- In a large pot, heat the cooking oil over medium heat. Sauté the shallots, garlic, red chilies, galangal, and lemongrass until fragrant.
- Add the turmeric powder and coriander powder, then stir well to combine.
- Pour in the coconut milk and water, then add the kaffir lime leaves and salt. Bring to a gentle simmer.
- Add the crab pieces to the pot and cook for about 15-20 minutes, or until the crab is fully cooked and the flavors have melded together.
- Season with sugar and adjust the salt if needed. Remove from heat and serve hot with steamed rice.
